Below is my editorial calendar for my Wine Spectator In the Kitchen
with Sam” column for 2008. The calendar may be amended to include one or more chef recipe-profiles over the course of the year, such as the one on Daniel Boulud and his pork belly dish. These chef columns will need a specific recipe that can be made at home.
Please note that due dates are when the stories have to be turned in. So I would need to interview subjects and/or receive samples well beforehand. To save time, send the contact info (phone #s, email, best times to call) for interview subjects when you pitch any ideas.
Last year, Wine Spectator's food section expanded. It is now called Tastes (formerly the name of my column). Tastes has opportunities for 100 to 200 word reviews of new products, whether they be food, wine or equipment. Please note that the fourth annual special food section will appear in September and will focus on cheese. I will also be writing a holiday feature story on mail-order or on-line ordered food.
On my newly designed web site, there will be a feature on the home page called the “Pick of the Week.” This could be a food, wine or piece of cooking or wine equipment. It will also include a color picture. Please feel free to send suggestions.
All mail, samples, and other correspondence and questions relating to my "In the Kitchen" column in the Wine Spectator, freelance articles on food, wine, and spirits for other publications, and my SamCooks Newsletter should be sent to the address below. If possible, send press releases and other information via email.

October 15 Cooking with Spirits. People often cook with wine, but what about vodka, gin and other spirits? Due July 17
October 31. Heritage Meats. More and more breeds of cattle, pigs and sheep are being reintroduced into our food supply. An update on what breeds to look for, how they taste, and where to find them. July 31
November 15. Suckling Pig. This staple in many Spanish restaurants is becoming more and more available on American restaurant menus. Due August 21
November 30. American Truffles. Oregon, Tennessee, and soon North Carolina. Due September 4
December 15. Knives. The best, and how to care for them. Due September 18
December 31. Feast of the Seven Fishes. An Italian tradition on Christmas Eve. A natural to bring in Italian chefs to weigh in on their takes. Due October 2
